I love cheesecake and I love brownies. Well, I love anything sweet, but these two are heaven. Why not combine them and I bet it taste delicious. Cheesecake brownies is a divine dessert and hands down to the inventor of this dessert. Cheesecake brownies is a well balance dessert. It has the chocolaty sweetness of the brownies plus the creamy salty flavor of the cheesecake exploding in harmony.
This recipe is a combination of my fudge brownies recipe and the cheesecake brownies recipe of David Lebovitz. The brownie base is so fudgy and chocolaty and the cheesecake batter is nice and creamy. It is like a perfect couple. I made some batches of these recipe last Christmas as gifts and my friends liked it so I must give my self a tap for a work well done.
I made my usual brownie batter, topped it up with the cheesecake batter, give it a nice swirl of a sharp knife and bake it in the oven and voila! It’s done. The takes longer time to bake, about 20 to 25 minutes longer but the wait is super worth it.
Ingredients
Brownie
6 ounces Unsweetened Chocolate Bar
1 cup Unsalted Butter, equivalent to one bar
pinch Rock Salt, remove if using salted butter
4 pieces Eggs
2 cups White Sugar
2 teaspoons Vanilla Extract
1/2 cup Flour
Cheesecake Batter
1 bar Cream Cheese, softened to room temperature
1 piece Egg Yolk
6 Tablespoons Sugar
1/2 teaspoon Vanilla Extract
Procedure
Preheat oven to 150 degrees Celsius.
In a saucepan, melt together the unsweetened chocolate, butter and salt. Set aside to cool.
Using a stand mixer, mix the eggs using the paddle attachment for three minutes at medium speed. Add one cup of sugar and mix for another two minutes at medium speed. Add the last cup of sugar and mix for another two minutes. Add the melted chocolate-butter mixture and fold using a spatula. Do not mix the batter. We are trying to avoid the formation of large bubbles. Add the vanilla and fold. Gently fold in the the flour. Transfer the batter in 10 x 10 inches baking pan. Be sure to line it with baking paper or greased it with butter or oil. Give it a few tap to release some bubbles and set aside.
In a separate bowl, mix the cream cheese using a hand mixer until smooth and creamy. Add the egg yolk and sugar and mix for another one minute. Topped it up on the brownie batter and bake for an hour and 10 minutes to an hour and 15 minutes. Just insert a toothpick and small crumbs should be visible on the toothpick’s body and it’s done. Cut the Cheesecake Fudge Brownies to desired size.
