Munggo Sardines with Alugbati

Munggo Sardines with Alugbati is my tatay’s recipe. He has no plan of cooking it, however, our neighbor gave us a bunch of alugbati and he decided to cook it with munggo or mung beans. We’ve been saturated with pork and chicken this week so adding fish in our menu is a plus.

Luckily, our neighbor gave a bunch of alugbati, if not, we are going to eat our dinner last night for the third time. My dad loves to cook so much. When I mean so much his dish can cover our lunch and dinner for the day and even lunch for the next day. This is to save some LPG from cooking food from time to time.

Alugbati is one of my favorite leafy vegetables. From what I found out, alugbati is also known as Malabar Spinach. We used to play with its small violet fruits as a natural colorant or paint. I remember my mom would get mad whenever we stained our clothes with its fruits.

Tips

This Munggo Sardines with Alugbati recipe is very affordable and it can feed a family of five. You can use a hot and spicy version of canned saridnes for added kick. If you don’t have alugabti you can substitute malunggay leaves for this recipe.

If you don’t like canned sardines, you can go with the traditional recipe of using ground or minced pork.

Like any other munggo recipes, this dish is best served with grilled or fried fish or even pork. However, in our case we use dried daing na dilis or anchovies. I fried it until golden brown and crispy and served with garlic vinegar dipping sauce.

Ingredients

1/2 cupMunggo or Mung Beans
1 cupWater
2 cupsWater
4 TablespoonsOlive Oil
6 cloves Garlic, chopped
1 pieceOnion, chopped
4 piecesTomatoes, chopped
1 1/2 cupsWater
 1 piece155g Can Sardines in Tomato Sauce
1 pieceShrimp Bouillon Cube
1/4 teaspoonGround Black Pepper
Patis or Fish Sauce
Bunch of Alugbati Leaves

Procedure

Combine mung beans and one cup of water. Soak for an hour.

Drain mung beans and combine with two cups of water in a pot. Boil and simmer until mung beans are soft. Mash the mung beans using the back of your wooden spoon. Stir until water almost dries out and set a side.

Using the same pot, sauté garlic, onion and tomatoes in olive oil. Add half cup of water and bring to a simmer for 5 minutes. Then, mash the tomatoes using the back of the wooden spoon.

Add the mashed mung beans, remaining water, canned sardines and bouillon cube. Stir and let it simmer for 5 minutes.

Season with ground black pepper and fish sauce.

Add the alugbati and simmer for another 3 minutes.

Munggo Sardines with Alugbati is a recipe of my dad. Instead of using pork, canned sardines is added. Alugbati is also added but malunggay leaves can also be used.

Ingredients
  

  • 1/2 cup Munggo or Mung Beans
  • 1 cup Water
  • 2 cups Water
  • 4 Tablespoons Olive Oil
  • 6 cloves Garlic, chopped
  • 1 piece Onion, chopped
  • 4 pieces Tomatoes, chopped
  • 1 1/2 cups Water
  • 1 piece 155g Can Sardines in Tomato Sauce
  • 1 piece Shrimp bouillon Cube
  • 1/4 teaspoon Ground Black Pepper
  • Patis or Fish Sauce
  • Bunch of Alugbati Leaves

Instructions
