Flavorful Pinaupong Manok

Pinaupong manok is a Filipino Classic Chicken Recipe. The chicken is placed in a pot with lots of salt and cook on top of the stove. The salt acts as an insulator and emits steam which helps in cooking the chicken. The result is tender and succulent chicken with a hint of smoky flavor.

Ingredients
  

Marinade
  • 1 Whole Dressed Chicken
  • 4 Tablespoons Soy Sauce
  • 4 Tablespoons Oyster Suace
  • 1 Tablespoons Italian Seasoning
Stuffing
  • 6 cloves Garlic chopped
  • 1 bulb Onion chopped
  • 3 thumb-sized Ginger smashed
  • 1 teaspoon Italian Seasoning
Salt Bed
  • 3-4 Cups Salt
  • 2 Tablespoons Italian Seasoning

Method
 

  1. Thoroughly clean the chicken.
  2. Combine marinade in a bowl. Set aside.
  3. Combine the Stuffings and stuffed into the chicken. Drizzle the chicken with the marinade. Also pour some of the marinade inside of the chicken. Marinate overnight.
  4. Bring out the chicken from the fridge at least 30 minutes before cooking.
  5. Combine salt and Italian seasoning. Place the salt mixture in pot. Put the banana leaf on top of the salt. Place the chicken and cover. Cook over low heat for an 1 hour and 20 minutes. Increase heat to medium high for 15 to 20 minutes until the chicken is golden brown.
