Lechon Kawali Version Two

Lechon Kawali Version Two was slowly baked then deep fried until crispy.

Ingredients
  

  • 1 kilo Pork Belly Slab
  • 4 cups Water
  • 1 head Garlic, chopped
  • 1 bulb Onion, chopped
  • 1 piece Thumb - sized Ginger, chopped
  • 1 stalk Lemongrass, lightly pound
  • 1 Tablepsoon Italian Seasoning
  • 2 Tablespoons Sugar
  • 1 cup Salt
  • 1/4 teaspoon Ground Black Pepper
  • Oil for Deep Frying

Method
 

  1. Thoroughly clean the pork belly slab.
  2. In a bowl, combine water, garlic, onion, ginger, lemongrass, Italian seasoning, sugar, salt and ground black pepper. Marinate overnight in the refrigerator.
  3. Preheat oven to 130 degrees Celsius.
  4. Remove pork belly slab from the fridge at leats 30 minutes before cooking. Pat dry.
  5. Bake for 2 hours and cool to room temperature.
  6. Deep fry in hot oil until skin is popping crispy.
