Pork and Jackfruit Sinigang

Pork and Jackfruit Sinigang or sinigang na baboy at langka is another Ilonggo dish introduced to us by our tatay (dad). It requires few ingredients but equally delicious as your sinigang na baboy dish minus the other vegetables.

Ingredients
  

  • 500 grams Chopped Pork Ribs
  • 250 grams Chopped Young Jackfruit
  • 4 - 6 cups Water
  • 8 cloves Garlic, chopped
  • 1 bulb Onion, chopped
  • 5 pieces Tomatoes, quartered
  • 2 - 3 Tablespoons Sinigang Mix with Gabi
  • 1/8 teaspoon Ground Black Pepper
  • Patis or Fish Sauce

Method
 

  1. Thoroughly clean the pork ribs.
  2. In a pot, combine pork ribs, jackfruit, water, garlic, onion and tomatoes.
  3. Boil and simmer until the pork ribs is tender. Slightly mash the tomatoes using the back of your wooden spoon. Add more water if needed.
  4. Add sinigang mix and season with ground black pepper and patis. Let it simmer for another 15 minutes.
