Method
Fried Fish
- Thoroughly clean the fish. Butterfly the fish by running through the knife from the tail of the fish up to 2/3 part of the fish. Do the same for the other side. Season with salt and pepper.
- Combine and mix flour, salt and pepper. Drench the fish into the flour mixture. Make sure every inch of the fish is covered with flour. Rest for 15 minutes before deep frying until golden brown. Drain the fish with excess oil and set a side.
Ginger Sauce
- Combine grated ginger, chopped spring onions and salt in a bowl.
- Heat vegetable oil until smoking hot and pour into the ginger mixture. Add the sesame oil after 5 minutes and set a side.
Say Based Sauce
- Combine and mix together water, oyster sauce, soy sauce, brown sugar and ginger sauce. Bring to a boil and simmer for 5 minutes.
- Premix cornstarch and water. Add cornstarch mixture in to the soy based sauce and mix to thicken. Season with salt and pepper.
