Fish with Soy and Ginger Sauce is another way on how you can prepare a very expensive fish like Lapu – lapu. This dish is full of Asian flavors. It hay sweet, savory and gingerly flavor. It somewhat resembles a sweet and sour recipe minus the sour flavor.
Our family loves to eat fish on weekends. It’s like our most healthy days of the week. Why? Because we just avoid the wonderful taste of pork or beef. But do not mistake this dish as not so flavorful. It is flavorful and tasty. This dish is another version of my Sweet Spicy Soy Cream Dory Fish Fillet recipe I cooked before.
This weekend my mom is not around and having her day off with her senior friends in Banahaw. My dad bought a kilo of whole Lapu – lapu fish with the intention of steaming it. However, I want something new and thought of the sweet spicy cream dory fish fillet I cooked before. It’s been a while since we had this and so we will have Fish with Soy and Ginger Sauce for lunch.
Instead of simply making a soy based sauce, I thought of having a ginger sauce on the side. This is one of my favorite sauce in the world which really goes well with fish. The gingerly flavor eliminates the fishy taste of Lapu – lapu and gives the fish a cool spicy aftertaste.
Tips
Do you hate the fishy odor or aftertaste of the fish? The secret of eliminating this awkward flavor is simply salt and vinegar. Massage the fish with salt and pour a generous amount of vinegar into it. That is, inside and outside of the fish. Then marinate the fish in the vinegar for 5 minutes before rinsing with tap water. Do this twice and the fishy odor will be considerably reduced.

1/2 teaspoon | Salt |
1/2 teaspoon | Ground Black Pepper |
Oil for Deep Frying |
Ginger Sauce
2 Tablespoons | Grated Ginger |
3 Tablepsoons | Chopped Spring Onions |
Salt | |
1/4 cup | Vegetable Oil |
1/2 teaspoon | Sesame Oil |
Soy Based Sauce
1 cup | Water |
3 Tablespoons | Oyster Sauce |
2 Tablespoons | Light Soy Sauce |
2 Tablespoons | Brown Sugar |
1 Tablespoon | Ginger Sauce |
1 teaspoon | Cornstarch |
2 Tablespoons | Water |
Salt | |
Ground Black Pepper |
Procedure
Fried Fish
Thoroughly clean the fish. Butterfly the fish by running through the knife from the tail of the fish up to 2/3 part of the fish. Do the same for the other side. Season with salt and pepper.
Combine and mix flour, salt and pepper. Drench the fish into the flour mixture. Make sure every inch of the fish is covered with flour. Rest for 15 minutes before deep frying until golden brown. Drain the fish with excess oil and set a side.
Ginger Sauce
Combine grated ginger, chopped spring onions and salt in a bowl.
Heat vegetable oil until smoking hot and pour into the ginger mixture. Add the sesame oil after 5 minutes and set a side.
Soy Based Sauce
Combine and mix together water, oyster sauce, soy sauce, brown sugar and ginger sauce. Bring to a boil and simmer for 5 minutes.
Premix cornstarch and water. Add cornstarch mixture in to the soy based sauce and mix to thicken. Season with salt and pepper.
