Shrimp Preparation
- Thoroughly clean the shrimps. Remove its shells except its head. Cut off its whisker. Wash and drain. Season with salt and pepper. Set a side.
- Combine potato flour, salt, pepper and cayenne pepper. Mix until combined.
- Drench the shrimps until lightly covered. Deep fry in hot cooking oil until golden brown. Approximately 3 minutes.
Garlic Butter Sauce
- In a pan combine butter, olive oil and garlic. Switch on heat to very low setting.
- Let the butter melt very slowly. Maintain setting for 5 minutes of until the garlic is cooked but still white translucent in color.
- Add the shrmips and stir until every shrimps are covered with the garlic butter sauce. Season with salt and pepper.
- Garnish with lemon wedges and chopped onion spring or parsley.
