Tuyo (Dried Fish) Pan-Oven Grilled Pizza

If your remember, I made this Gourmet Tuyo version and as promised and as part of my Mom’s Birthday Celebration, I’m making this Tuyo Grilled Pizza (Everyone is fasting on meat so this is another way to enjoy pizza.)

This version of grilled pizza is yeast free and what I did was made the dough, grill it on a greased pan and top it with sauce and everything and pop it in the oven until the cheese melts.  Easy, just took me about 30 minutes to finish (well, an hour because I did photos for my blog).

Ingredients
Dough
2 cups                                All Purpose Flour
1 teaspoon                         Salt
2 teaspoon                         Baking Powder
1 cup                                 Water

Toppings
2 Tablespoon                     Olive Oil
6 pieces                             Tomatoes, seeded and cut into 8 parts cubed
1 piece                              Onion, ring onion-style cut (I don’t know how you call it)
                                         Salt
Pepper
1/2 cup                             Tomato Sauce (I got an extra spaghetti sauce and used it for this pizza)
Gourmet Tuyo
Quick Melt Cheese, grated

Procedure
Dough



1.  Preheat oven to 175 degrees Celsius. Combine dry ingredients and mix with wire whisk until all the ingredients and well combined.  Add water gradually and mix and cut using a fork.

2.  Continue mixing until you achieve a sticky soft dough.

3.  Generously sprinkle a surface with flour.  Divide the dough into 3 parts.  Roll and flatten each parts like that of a pizza crust.

4.  Heat a skillet and brushed the surface with oil.  Place the flattened dough on the skillet for 3 to 5 minutes or until the dough is already golden brown.

Toppings
Heat a skillet and add the olive oil.  Toss in the onion and tomatoes.  Season with salt and pepper and stir fry until the onion caramelized and the tomatoes’ skin start to wrinkle.  Set aside.

Assemble

Add about 2 to 3 Tablespoon of the tomato sauce.  Topped with the tomato-onion mixture, gourmet tuyo and quick melt cheese.  Switch the oven to Grill Mode and popped the pizza into the oven for 10 minutes or until the cheese melts and slightly gold in color.
HOW DOES IT TASTE?
This grilled pizza is Yummy!  The crust is thin and crispy.  The flavor of the gourmet tuyo compliments well with the tomato sauce and the tomatoes.  The caramelized onion gave a subtle sweetness flavor and the cheese gave the this nostalgic pizza experience, minus the meat.
