It’s a lazy afternoon today and the weather this past few weeks has been really wet. It rains everyday which I really don’t like. Yes, the gloomy weather kind of influence me or should I say us to just sleep and totally be lazy all day. I got hungry and I want to eat something savory but I don’t want so much fuzz in our kitchen today. I want a simple dish that is so simple to do with little ingredients to handle. The result of my snack meditating moment is quesadilla.
Quesadilla is a Mexican dish made of tortilla filled with cheese, meat and vegetables. It is usually served with fresh tomato salsa and sour cream.
This dish is so easy to do and all you need are cheese and onion cooked in olive oil until it caramelized. Caramelizing the onion will release its natural sweetness which I really loved about it. Then I made a simple sour cream dip made of sour cream and some chopped parsley.
Ingredients
Flour Tortilla
Grated Quickmelt Cheese or cheese of your choice
Caramelized Onion
Chopped Parsley
Sour Cream
Chopped Parsley
Procedure
Laid one tortilla on a flat surface and topped with grated cheese. Okay, be generous with the cheese. You’ll definitely love it with so much cheese. Topped with caramelized onion and chopped parsley. Finally, topped with another tortilla flour. If you want to be more traditional, simply fold the tortilla in half to enclose everything. Pan grill the quesadilla until golden brown.
For the sour cream dip, simply combine sour cream and chopped parsley and served with quesadilla.
If you desire to serve your quesadilla the more traditional way simply combine chopped tomatoes , onion and parsley and season with salt and serve with quesadilla and sour cream dip.
