It’s been a more than a month now since I wrote an entry to the blog. I have been very busy this past few weeks. I resigned from my previous job after five months of working due to shitty legal conflict. So, yeah, after long time I will be writing again.
My mom is now learning to explore the power of youtube to learn new recipes. Yesterday, Saturday,we had Pinaupong Manok which she learned from youtube. It’s really good and something new. Yesterday, after we had our dinner, she asked me what she will be cooking for Sunday lunch. Since, all I want to do during weekend is rest and sleep, I asked what is she thinking. Then, she started talking about Chicken Sisig she watched over youtube. Initially I wanted pork sisig but I’m afraid my parents’ blood pressure will shoot up so I agreed with chicken sisig. Anyway it will be the first time we will be having this dish.
My mom bought a kilo of chicken and a quarter kilo of chicken liver. She marinated the chicken in soy sauce, calamansi juice, pepper and Maggi Magic Sarap. Then, I prepared the liver. I trimmed the excess fat and cleaned it thoroughly. I marinated the liver in calmansi juice, salt, pepper and ginger.
Since I’m in the mood to cook today, I took over the kitchen. After 30 minutes, I grilled the chicken and chopped it. I pan fried the liver and chopped it. I mixed the chopped garlic, onion, mayo, chili and meat. Then, I seasoned it with calamansi juice and soy sauce. I heat the sizzling plate until smoking hot and placed the prepared sisig and topped it off with cracked egg.
Ingredients
1 kilo Chicken, you can opt with chicken fillet
1/4 cup Soy Sauce
2 Tablespoons Calamansi Juice
1 Tablespoon Maggi Magic Sarap
1/2 teaspoon Black Pepper
1/4 kilo Chicken Liver
2 Tablespoons Calamansi Juice
1/4 teaspoon Black Pepper
1 thumb-sized Ginger, grated
1/4 teaspoon Salt
8 cloves Garlic, chopped
2 bulbs Onions, chopped
1/4 cup Mayo
3 Tablespoon Soy Sauce
1/2 cup Calamansi Juice
salt to taste
chopped chili
1 egg
Procedure
Combine chicken, soy sauce, calamansi juice, Maggi Magic Sarap and black pepper. Marinate for 30 minutes and grill.
Combine chicken liver, calamansi juice, pepper, ginger and salt. Marinated for 30 minutes and fry.
Chop chicken meat and liver to desired size. Small cubes, about half an inch is good. Combine chopped chicken meat and liver with garlic, onions, mayo, soy sauce, calamansi juice, salt and chili.
Heat sizzling plate until smoking hot. Add 2 tablespoons of butter or cooking oil. Place Chicken Sisig and top with cracked egg and serve.
