I’ve been sick or should I say not feeling okay this past few days. I felt so weak and light headed. Yes, again, I had my blood pressure shoot up since Saturday until Tuesday. Guess what? Some rashes just suddenly appeared on my face, chin, chest, back and arms last Tuesday and decided to see a doctor on Wednesday.
Officially, the doctor suggested to take a few days off from work and to observe if these rashes are signs of chicken pox. Yeah! I haven’t got chicken pox in my childhood. Thanks to my mom’s endless vaccine schedules during my younger days. Since Thursday night, I’m suffering from rashes and few scratching from there and there, luckily today, the itching and the appearance of rashes stopped. It seemed that they are fading and some are starting to dry. Good grace they are not chicken pox. Maybe some sort of viral infection. I’m still wondering how I got these things.
Since I don’t want to just sit back and sleep, it would just make me feel more sick, I told to myself I have to do something. Well, better cook something for lunch since my mom and dad had their own errands outside. We had some Cream Dory fish fillet in the fridge for a week now and I got an idea inspired by one of the menu in my friend’s wedding. I just so happy that the ingredients are all available, except for the lemon which I bought the night before. I decided to make a baked cream dory.
For our lunch, I decided to cook Baked Cream Dory Fillet with Cheesy Mashed Potato. This is not your usual baked cream dory. The cream dory is covered with cooked mashed potato. Then, some pistachios are sprinkled over the mashed potato. This is then layered with cream and cream cheese mixture. Then, grated cheese and chopped parsley were sprinkled over and baked for 45 minutes at 180 degrees Celsius.
Ingredients
Fish
2 to 3 pieces Cream Dory Fillet (about 1 package)
salt
pepper
paprika
zest of one lemon
juice of half a lemon
Mashed Potato
1 kilogram Potato
4 Tablespoons Unsalted Butter
dash of powdered nutmeg
1 Tablespoon Milk
salt to taste
Cream
250mL All Purpose Cream
1/4 cup Cream Cheese, cut into cubes
Garnish
1/4 cup Roasted Pistachio
1/3 cup Grated cheese of your choice
1/2 cup Cream Cheese, cut into cubes
1/4 cup Chopped parsley
Procedure
Preheat oven to 180 degrees Celsius. Lightly greased a small baking pan.
Pat dry the fish fillet. Season with salt, pepper, paprika and lemon zest.
Squeeze out the juice of half a lemon. This helps to remove the fishy smell of the cream dory. Ofcourse, remove the lemon seeds. We don’t want that bitter taste on our food. Set the fish aside and prepare the mashed potato.
Clean and boiled the potato until tender. I decided not to remove the skin as there are nutrients in the skin. Mashed it using the back of a fork
Add a tablespoon of milk. I used evaporated milk, specifically the brand Alpine. I find it really creamy compared with the other evaporated milk.
Prepare the cream mixture. Simply fold in the diced cream cheese into the all purpose cream.
To arrange, scoop the mashed potato over the fish fillet.
When all the cream dory fillet were covered with mashed potato, add the pistachio.
Cover this layer with the cream mixture.
Topped with grated cheese, cream cheese and chopped parsley.
Popped in the oven and bake for 45 minutes. Let it cool for 15 minutes. We don’t want that hot watery cream do we? Just be patient until everything is set. Enjoy this baked cream dory with hot rice or you can enjoy it as is, since it’s a one complete meal.
