Beef Wanton Noodle is one of my favorite Chinese dish. The best spot to get this noodle is at Wai Ying in Binondo, Manila. Check out my post about Wai Ying here. It is a hole – in – wall restaurant in binondo that offers Chinese cuisine at a very affordable price.
It was first introduced to me by my Chinese friend. We tried it out and we were surprised how good and affordable it was. Even a college student like me was able to bought a bowl of Beef Wanton Noodle at Php90.00. Yeah! I think it was Php90.00 per bowl. I think it’s already Php110.00 now.
After that I became curious about that flavorful soup. It’s like the broth has umami in it. Well, I know for a fact that it has sodium monoglutamate, however, it has this distinct flavor that is different from the Filipino Beef Mami.
I searched for Beef Wanton Noodle recipe and found out that it has star anise in it and does not contain sodium monoglutamate, which is a plus factor.
Some of the recipes called for so many spices but I like mine to be simple. The usual recipe calls for garlic, onion, ginger, star anise, soy sauce, and of course the beef brisket. Boiled for many hours until fork tender. The meat and spices are removed. The broth is strained to get that clean – looking soup. Then, it is poured to the egg noodle and different garnishes are added.
For this recipe, I made my own wonton or siu mai dumplings. It’s basically made of ground beef, chopped shrimps, green onions, oyster sauce, egg, cornstarch and crab fat or aligue sauce.
Beef Wanton Noodle Soup Ingredients
8 cups | Water |
1 Head | Garlic, crushed and chopped |
2 Bulbs | Onions, chopped |
2 Thumb- sized | Ginger, crushed and chopped |
1 teaspoon | Whole Peppercorn |
1/2 teaspoon | Ground Peppercorn |
750 grams | Beef Brisket |
1/4 cup | Light Soy Sauce |
1/2 cup | Anisado Wine |
1 piece | Beef Bouillon Cube |
6 pieces | Star Anise |
3 Tablespoons | Dried Shrimp |
2 Tablespoons | White Sugar |
2 Tablespoons | Sesame Oil |
Soy Sauce | |
Salt |
Wanton or Siu Mai Ingredients
500 grams | Ground Beef |
250 grams | Shrimp, cleaned and chopped |
8 cloves | Garlic, minced |
1/4 cup | Oyster Sauce |
1/2 teaspoon | Ground Black Pepper |
2 Tablespoons | Crab Fat or Alique Paste |
1/4 cup | Green Onion, chopped |
2 Tablespoons | Sesame Oil |
1 piece | Egg |
4 Tablespoons | Cornstarch |
Dumpling Wrapper |
Garnish
Chinese Cabbage, blanched |
Enoki Mushrooms, blanched |
Chopped Green Onions |
Procedure
First, in a pot, combine water, garlic, onion, ginger, whole and ground peppercorn, beef brisket, soy sauce, anisado wine and beef bouillon cube. Then, boil and simmer until beef is fork tender.
Add star anise, dried shrimps, sugar and sesame oil into the pot, and let it simmer for another 15 minutes. Season with soy sauce and salt to taste. Lastly, remove the beef meat and strain the broth. Throw away the spices,
To make the dumpling, mix everything in a bowl using your hand until you get a sticky dough of meat. Chill the meat for an hour before wrapping. Steam for 15 minutes and set aside.
Pour broth onto the noodles. Garnish with boiled beef, dimsum, Chinese cabbage, enoki mushroom and green onion.

Beef Wanton Noodle Soup
- 8 cups Water

- 2 Tablespoons Sesame Oil

- 4 Tablespoons Cornstarch
