Ginisang Patola with Sardines and Misua

My dad prepared our lunch for today. It’s a simple ginisang patola with sardines and misua. Everything is just sautéed and water is added for some broth.

Patola is the Filipino translation of loofah or luffa. Don’t get your luffa in your bathroom and mix it in this recipe. You need the fresh one.

Basically you can use ground pork or beef, or even shredded chicken for this recipe. However, since it’s Holy Week a good substitute to these meats is the very affordable canned sardines. Besides, canned sardines has its own charming flavor. It’s very handy when you are too lazy to cook. Check out some of my Sardines Recipe here.

Misua is a very thin noodles that can be easily found here in the Philippines. I bet your trusted sari – sari store has this hanging in their store. When cooked, misua has a melt in your mouth texture.

This ginisang patola with sardines and misua is so easy and fast to prepare. Simply saute the garlic, onion and tomatoes in olive oil. Then add the saridnes, water and patola. Let it simmer until the patalo is cooked then add the misua. Season with fish sauce and black pepper. This is best paired with fried fish specially daing na bangus.

Ingredients

3 TablespoonsOlive Oil
6 clovesGarlic, minced
1 bulb Onion, chopped
4 PiecesRipe Tomatoes, chopped
1 can155g Canned Sardines
3 cupsWater
750 gramsPatola
50 gramsMisua
kdFish Sauce and Black Pepper to taste

Procedure

Sautee garlic, onion and tomatoes in olive oil.  Cover and reduce heat to low.  Cook for 5 to 10 minutes or until the tomatoes and tender.  Press the tomatoes with the back of your wooden spoon.

Add the canned sardines.  Slightly chopped the sardines with your wooden spoon or you can leave in as is.

Add water and let it simmer for 10 minutes.

Then, add the patola and let it simmer until the patola is cooked.

Lastly, add the misua and season with fish sauce and black pepper.  Simmer for another 5 minutes.

Quick and easy recipe to incororate canned sardines into a vegetable dish.  The sardines is a substitute to ground pork or meat which is perfect this Holy Week.  This is best served with fried fish.

Ingredients
  

  • 3 Tablespoons Olive Oil
  • 6 cloves Garlic minced
  • 1 bulb Onion chopped
  • 4 Pieces Ripe Tomatoes chopped
  • 1 can 155g Canned Sardines
  • 3 cups Water
  • 750 grams Patola or Fresh Loofah peeled and sliced
  • 50 grams Misua
  • Fish Sauce and Black Pepper to Taste

Instructions
 

  • Sautee garlic, onion and tomatoes in olive oil.  Cover and reduce heat to low.  Cook for 5 to 10 minutes or until the tomatoes and tender.  Press the tomatoes with the back of your wooden spoon.
  • Add the canned sardines.  Slightly chopped the sardines with your wooden spoon or you can leave in as is.
  • Add water and let it simmer for 10 minutes.
  • Add the patola and let it simmer until the patola is cooked.
  • Add the misua and season with fish sauce and black pepper.  Simmer for another 5 minutes.
