This Ube Macapuno Baked Donuts Recipe is one of my journey in bread making and experimenting. Most donuts are fried and for me it is delicious. However, if I’m the one who is going to fry it, that’s another story. I made donuts before and their fried. Frying in this time of the year is a big no for me. The weather is so hot.
Besides the hot environment when frying, it is very costly. You’ll need a lot of oil to fry a batch of donuts. On the other hand, baking the donuts are simple. Simply place a batch of donut dough on a baking tray and bake it for few minutes and that’s it. Of course, there will be some differences but all in all, the donuts taste good.
So why donuts? My mom was scrolling her facebook and my sister – in – law posted a picture of her donuts. She told me it looks delicious and I told her we will make some tomorrow. I told her I’ll bake it instead of frying. She agreed and told me that cooking oil is expensive.
Knowing my parents, specially my dad, they have sensitive taste to sweets. A little sugar and its already too sweet for them. So for this recipe, I refrain myself from rolling the donuts in sugar or even dust it with powdered sugar.
Tips
This Ube Macapuno Baked Donuts Recipe can make 18 pieces of 40-gram weight donut dough. You can actually fry the dough if you like the more traditional way of making donuts. Then roll it on sugar or dust it with powdered sugar while still hot. If you decided to bake this recipe and cover it with sugar, do it while the donuts are still hot so the sugar will still stick on the surface.
If you prefer other flavors of filling or the classic custard filling, simply replace the Alaska Condensada with the regular condensed milk and the ube flavor with vanilla flavor.

Baked Donuts
3 cups | Bread Flour |
2/3 teaspoon | Salt |
2/3 cup | Milk |
1/3 cup | Butter |
1/4 cup | Firmly packed Brown Sugar |
2 1/4 teaspoons | Active Dry Yeast |
2 pieces | Eggs |
Ube Macapuno Custard Filling
1 cup | Milk |
1 cup | Alaska Condensada Ube Macapuno Flavor |
5 pieces | Egg Yolks |
3 Tablespoons | Cornstarch |
3 Tablespoons | Flour |
1/4 cup | Ube Halaya |
1 teaspoon | Ube Flavor |
2 Tablespoons | Butter |
Procedure
Baked Donuts
Preheat oven to 180 degrees Celsius.
Combine bread flour and salt. Mix and set a side.
In a saucepan combine milk, butter and brown sugar. Set heat to low setting until the butter melts. Stir from time to time. Remove the pan from heat and cool until lukewarm.
Add yeast and mix. Set a side for 15 minutes.
Transfer yeast mixture in your mixing bowl. Add eggs and mix until incorporated.
Add the dry ingredients into the mixing bowl. Mix using your stand mixer with dough hook attachment. Mix for 12 minutes.
Transfer dough onto a lightly floured surface. Knead for additional 3 minutes. Wipe the inside of your mixing bowl with oil. Place dough and lightly grease the surface of your dough. Cover with a kitchen towel and proof for 1 hour.
Lightly punch the dough to release air. Transfer the dough on a floured surface. Cut and weigh the dough to 40 grams. Shape each cut dough into a ball and lightly flatten to 1 inch thick. Place the shaped doughs on a baking tray. Cover and proof for another 30 minutes.
Place 2 cups of hot water in a baking tray and place it at the lowest rack of your oven.
Bake the dough for 11 to 12 minutes. Place on a wire rack to cool.
Ube Macapuno Custard Filling
In a saucepan, combine milk and Alaska Condensada. Mix and heat the milk mixture over low setting until slightly simmering.
In a bowl, combine egg yolks, cornstarch, flour, ube halaya and ube flavor. Mix until free from lumps.
Pour 1/3 of the milk mixture into the egg yolk mixture and mix. Transfer the egg yolk mixture into the milk mixture and continue heating over low heat with continuous stirring until the custard mixture thickens. Set a side to cool completely.
To Assemble
Place your custard filling in a piping bag with your desired tip. Poke a hole one side of your donut up to the other end but not passing through the other side. Fill the hole with custard filling.
