Chicken Barbecue Made Easy was probably a brainchild recipe of my mom. She always cooked this whenever she does not have anything in mind for our packed lunch. The thing is it’s very easy to prepare.

She will just simmer the chicken in her barbecue sauce for several minutes the night before and that’s it. What I would do in the morning is to bake it in the oven to caramelize the sauce. Packed lunch ready!

Her barbecue sauce is sweet and savory. It has soy sauce, calamansi juice, banana ketchup and some seasonings. She will simmer it for 45 minutes or until the chicken is so tender.

The baked chicken barbecue is delicious and it’s almost liked grilled chicken minus the smoky flavor. This is also a great way to have chicken barbecue for your packed lunch without the hassle of grilling it on a charcoal.

Tips

If you have extra time preparing this Chicken Barbecue Made Easy recipe try to marinate the chicken in the barbecue sauce for several hours before simmering. You can also try to marinate it in the sauce after it cooked. However, if you are in a hurry, simply simmer it then bake it in the oven for 15 minutes over maximum temperature or until the sauce caramelized.

You can even prepare it a head of time or several days before baking it. Prepare it on weekend and bake it on weekdays. Just store it in the fridge with the proper container.

If you want that nice smoky barbecue flavor, simmer it and grill it over live charcoal until the sauce caramelized.

Ingredients

500 grams Chicken Leg and Thigh
8 clovesGarlic, chopped
1 bulbOnion, chopped
1 cupBanana Ketchup
1/4 cupOyster Sauce
2 TablespoonsLight Soy Sauce
2 Tablespoons Dark Soy Sauce
1 teapsoonChili Garlic Oil
2 TablespoonsKnorr Savor Ricj Chicken Liquid Seasoning
1/4 teaspoonGround Black Pepper
1 cupWater

Procedure

Thoroughly clean the chicken. Remove excess fat and pat with paper towel to dry.

In a pan, combine chicken, garlic, onion, banana ketchup, oyster sauce, light soy sauce, dark soy sauce, chili garlic oil, Knorr Savor Rich Chicken Liquid Seasoning, ground black pepper and water.

Boil and simmer for 1 hour and 30 minutes over very low heat.

Preheat oven to 240 degrees Celsius. Bake for 15 minutes.
