This Super Fluffy Pancake Recipe creates fluffy, soft and thick pancakes. When I say soft I mean really pillowy soft kind of pancakes. I made a Soft and Fluffy Pancake Recipe before but I must admit this one is the real thing.
The secret to this Super Fluffy Pancake Recipe if in the egg white. Yup! You need to beat the egg white until soft peak. Then, gradually add it into the batter. Gently and slowly fold it until fully incorporated.
Since this will create a thick kind of pancake one important thing to remember is to cover the pan. Another thing. Add a tablespoon of water onto the side of the pan to create a steam. The steam will help to ensure that the inside of the pancake is cook. Do not rush things. Set the heat at the lowest level possible. Like I said it’s thick.
You might think that this recipe is laborious. Well, it is. But trust me it’s so worth it.
Ingredients
4 pieces | Egg Yolks |
1 Tablespoon | Sugar |
3 Tablespoons | Water |
1 teaspoon | Vanilla Extract |
1/2 cup | All Purpose Flour |
1 1/2 teaspoons | Baking Powder |
1/8 teaspoon | Salt |
3 Tablespoons | Powder Milk |
4 pieces | Wegg Whites |
1/2 teaspoon | Calamansi or Lemon Juice |
3 Tablespoons | Sugar |
Cooking Oil | |
Water |
Procedure
Combine egg yolks, sugar, water and vanilla extracts. Whisk until combined.
Sift together flour, baking powder, salt and powder milk. Add the dry ingredients into the batter and mix until free from lumps.
In a separate bowl, combine egg whites and calamansi or lemon juice. Using an electric hand mixer, beat the egg whites until soft peak. Gradually add the sugar until you have a shiny smooth meringue.
Add 1 third of the meringue into the batter and mix. Add the batter into the remaining meringue and gently fold in the mixture unitl combine.
Heat a non – stick pan at the lowest possible heat. Lightly brush the pan with oil and wait for another 5 minutes.
Pour in 6 tablespoons of the pancake batter. Add 1 tablespoon of water onto the side of the pan ensuring that the water will not touch the batter. Cover the pan for 5 to 6 minutes.
Flip the pancake and cover for another 5 to 6 minutes.
Top it up with your favorite pancake toppings.
