Nutty Palitaw Recipe is a twist to the classic Filipino rice cake delicacy palitaw. Palitaw literally means “to appear” in English. So why is that? Because when you cook palitaw, the palitaw dough will float onto the surface of the boiling water. This means that the palitaw is already cooked.
Traditionally, palitaw is drenched in shredded coconut – sugar – roasted sesame seeds mixture. It is often sold on the street and comes in a very cheap price.
What makes palitaw a crowd favorite is its nice, soft and chewy texture. It has somewhat similar texture to mochi. Then, the flavor of the shredded coconut really compliments the sweetness of the sugar and the savory flavor of the roasted sesame seeds.
There are now different variations of palitaw but this Nutty Palitaw Recipe is probably the simplest version. Simply replace the shredded coconut with ground roasted nuts and that’s it. You can use regular sugar but I decided to use coconut sugar since I have it in our pantry. You can actually prepare this in 30 minutes.

Ingredients
1 cup | Water |
2 1/2 cup | Glutinous Rice Flour |
4 cups | Water for Boiling |
1 cup | Ground Roasted Nuts |
1/4 cup | Coconut Sugar |
1 Tablespoon | Roasted Sesame Seeds |
Procedures
Combine water and glutinous rice flour. Mix until you get a dough with clay – like consistency.
Divide the dough into 10 parts and roll into balls.
Flatten each ball into 4 inch wide circular dough.
Boil water and drop the flatten dough. Do not over crowd the palitaw dough.
Scoop out the palitaw once the dough float onto the surface of the water.
Transfer the palitaw onto a wire rack to remove excess water.
Combine nuts, coconut sugar and roasted sesame seeds.
Drench the palitaw into the nut mixture and serve.
