Grilled Salmon Head Recipe: How to Grill it in the Oven

Grilled Salmon Head Recipe is one of the most overlooked salmon recipe. Actually, the salmon head is the tastiest and flavorful part of the salmon. It might contain less meat compared to the salmon belly, but flavor wise it is at an advantage.

Yesterday, my dad bought a kilo of salmon head which he cooked as sinigang. Thank God he did not cooked everything because its only the two of us in our home. Imagining eating sinigang na salmon for 4 meals. Don’t judge me, salmon head like I said is flavorful but you can cook it in different ways.

While eating dinner my dad told be that he only cooked half of it and I ask him what will you do with the other half. He said he’ll cook it the same way. I told myself “I have to think of something”. And I told him I’ll cook it for tomorrow’s lunch.

My dad loves tuna head and salmon head but this will be the first time we are going to grill it. So why not try grilled salmon head recipe. However, I don’t want to go through the hassle of lighting up the charcoal and grilling it facing the lively burning hot charcoal. The solution? The very handy and reliable oven.

Tips

The technique in this Grilled Salmon Head Recipe is to set your oven at a really high temperature, possible the highest temperature it has. In my case it’s 260 degrees Celsius. At this temperature we are going to crispify the salmon skin. To help us achieve that, generously apply some salt on its skin. The salt really helps to make the skin crispy.

Since I’m using the oven, the skin is facing the main heating element which happens to be the upper heating element of my oven. If your are grilling using the charcoal, the skin should be facing the charcoal.

Then, I flip it and lowered the temperature to 200 degrees Celsius to just thoroughly cook the salmon meat. I baste it with oyster sauce mixture and increase again the temperature to 260 degrees Celsius to caramelized the sauce.

The salmon head can have a very fishy odor. What you should do is remove its gill and generously rub it with salt and vinegar. Then marinate the salmon head for 5 minutes and rinse it several times with tap water.

Ingredients

1/2 kiloSalmon Head, chopped
8 clovesGarlic, mashed
Salt
Ground Black Pepper
3 piecesCalamansi
Salt
2 TablespoonsOyster Sauce
1 TablespoonLight Soy Sauce
1 TablespoonSugar
1 TablespoonWater
Ground Black Pepper
Oil for Basting
Chopped Onion Chives, for garnish

Procedure

Pre – heat oven to 260 degrees Celsius.

Thoroughly clean the salmon. Remove the gills and wash several times. Drain excess water and set a side.

Rub the mashed garlic onto the salmon and season with salt and ground black pepper. Squeezed the calamansi juice over the salmon and marinate for 30 minutes.

Combine oyster sauce, light soy sauce, sugar, ground black pepper and water. Mix and set a side.

Baste the salmon with oil and generously apply some salt on the salmon’s skin to make it crispy. Grill in the oven for 15 – 20 minutes with the skin facing the main heating element. In my case the upper portion of the oven so the skin is facing upward.

Flip the salmon and lower the oven temperature to 200 degrees Celsius. Bake for another 10 minutes.

Baste the salmon with oyster sauce mixture and turn the oven temperature to 260 degrees Celsius. Bake for another 5 – 8 minutes. Garnish with chopped onion chives.

Ingredients

Notes

To remove the fishy odor of the salmon, generously rub the salmon head with salt and vinegar.  Marinate for 3 – 5 minutes and rinse thoroughly.
