Baked Chicken Inasal is not your usual inasal recipe. Basically, inasal means “grill”. But we are not grilling today. We are going to bake it. Chicken marinated in inasal marinade then baked for several minutes until done. Why not, right?
Inasal marinade usually have vinegar, soy sauce, garlic, ginger, onion, salt and pepper as seasonings. Then it is grilled and baste with red orange colored oil. This oil is just annatto oil or annatto seed steeped in oil. This gives the chicken inasal that distinct delicious looking color.
I think it is safe to say that the inasal marinade is no ones recipe, just like adobo. Everyone of us have their own recipe and probably some secret ingredients.
For my baked chicken inasal recipe, I used calamansi, vinegar, garlic, ginger, salt and lemongrass. I find those combination of herbs and spices tasty. It gives the chicken that nice subtle sweetness, tanginess and spiciness. However for this recipe I’m going to use my favorite vinegar, the pinakurat.
The good thing about this vinegar is, it has every ingredients you need. It has garlic, ginger and onion. However, I still added garlic and ginger to boost its flavor. Of course the lemongrass. Not everyone likes the flavor of lemongrass but it gives any grilled recipe that refreshing flavor.
Tips
Baked Chicken Inasal is your unconventional method of cooking inasal. Grilling the chicken is still the best method. It gives the chicken that distinct smoky flavor that we all fell in love with. However, if you don’t have space for grilling or just too lazy to fire up some charcoals, this would be your alternative.

3 pieces | Chiken Leg and Thigh |
1 cup | Pinakurat Vinegar |
2 Tablespoons | Grated Ginger |
6 cloves | Garlic, minced |
3 Tablespoons | Salt |
1 stalk | Lemongrass, mashed and finely chopped |
Juice from 4 Calamansi | |
Oil for basting |
Procedure
Thoroughly clean the chicken. Cut some slits on the chicken.
Combine pinakurat vinegar, grated ginger, garlic, salt, lemongrass and calamansi juice.
Marinate the chicken for 1 hour.
Baked for 45 minutes in an oven pre – heated at 220 degrees Celsius. Baste from time to time.
Served with pinakurat vinegar or soy sauce and calamansi sauce.
