Saucy Shredded Beef Tapa

Saucy Shredded Beef Tapa is a spurred of the moment recipe. I bought a half kilogram of beef yesterday night which I intended for corned beef recipe. However, corned beef recipe requires an enormous time to cure so I decided to make it our all time favorite beef tapa.

Beef tapa or what we Filipinos commonly known as tapsilog (TAPa, SInangag and itLOG) is a combination of beef tapa, fried rice and fried egg. I love tapsilog especially when you dip the tapa into the spicy garlic vinegar.

I would say my love for beef tapa started during my high school days. We always ate to this hole – in – a – wall eatery near our school. What I love about it is they served it sizzling style.

Everyone or every household has their own special recipe for beef tapa. However, this saucy shredded beef tapa is an inspiration of Jollibee’s beef tapa. It’s sweet, savory and has a nice thick sauce which really goes well with fried rice.

Tips

Sirloin and tenderloin cut of beef is the best cut of meat for beef tapa recipes. For this recipe of Saucy Shredded Beef Tapa I decided to flaked the beef to make it more flavorful. However, if you want that traditional beef tapa you can simply cut the meat to your desired serving size.

You can prepare this a head of time, just like what I did, and stir fry it when you need to heat it. The sauce will caramelized and will be thick and much more flavorful.

The time to tenderized the meat depends on how thick it is. I bought thinly sliced beef and it was tender after an hour and a half. I flaked it and bring it back to the sauce and let it simmer for another hour until the sauce is reduced. Then, I pour the cornstarch solution gradually to thicken the sauce.

Ingredients

500 grams Beef Sirloin, thinly sliced
8 clovesGarlic, chopped
1/4 teaspoonGround Black Pepper
1/2 cup Light Soy Sauce
1/2 cup Brown Sugar
2 cupsWater
4 TablespoonsCornstarch
6 TablespoonsWater

Procedure

Combine everything in a pot.

Boil and simmer until beef is tender. Add more water if needed.

Remove beef from the sauce.

Shred the beef and bring back into the sauce.

Simmer to reduce the sauce.

Mix together cornstarch and water. Gradually add the solution until the sauce thickens.

Serve with hot rice or garlic fried rice.

Saucy Shredded Beef Tapa is your beef tapa made extra special with its nice rich sauce. Drizzle it over hot cooked rice or fried rice and you will surely eat more. Best paired with fried egg and chili garlic vinegar dipping sauce.

  • 1/4 teaspoon Ground Black Pepper
