Pork Mami Recipe: How to Recook Your Leftover Pork Nilaga

This Pork Mami Recipe is a up-cycled recipe using pork nilaga recipe. Like what I’ve told you before, when my dad cooks, you would expect it to be too much. We will most likely eat it for several meals, lunch, dinner and lunch the following day. Isn’t that too much?

This Sunday, we had pork nilaga which was cooked several days before. We had it for lunch, dinner and lunch last Sunday. I told to myself, I don’t want this again for dinner. So, I thought of serving it for Sunday afternoon snack. Luckily we had some somen noodles and that’s it. Pork mami for merienda.

I love noodle dishes, specially Chinese style. The most delicious noodle soup for me is Beef Wanton from Wai Ying in Binondo. If you are a regular reader I’ve done several beef noodle dishes before and basically the base is somewhat similar.

To give the pork nilga the distinct taste of Chinese style noodle soup I added some ginger and star anise. This really do the trick. From a simple pork nilaga broth the taste becomes a lot more flavorful.

Tips

This Pork Mami Recipe uses leftover pork nilaga dish. However, I added a beef bouillon cube to give it a more beef flavor. Let’s admit it, beef broth is much, much flavorful than pork broth. I want that beefy goodness flavor in my broth. However, if you want the pork flavor you can simply use pork bouillon cube. If you have enough broth, there’s no need to add bouillon cube since you did not add more water.

If you are making this from scratch, simply boil and simmer the pork or beef until fork tender and proceed with the instructions here. Feel free to add some beef or pork wanton and Chinese cabbage if you want.

This recipe is much more delicious if you have leftover beef nilaga.

Ingredients

90 gramsSomen Noodles
2 cupsLeftover Pork Nilaga Dish, with meat
3 cupsWater
1 pieceStar Anise
1 piece Half Thumb – sized Ginger, crushed
1 TablespoonLight Soy Sauce
1 pieceBeef Bouillon Cube
Salt
Chopped Onion Chives
Hard Boiled Eggs

Procedure

Cook somen noodles according to package direction and set a side.

In a pot, combine pork nilaga, water, star anise, ginger, light soy sauce and bouillon cube. Boil and simmer for 15 minutes.

Season with salt.

In a bowl, add noodles and pour over hot broth. Garnish with onion chives and egg.

  • 1 Tablespoon Light Soy Sauce
  • 1 piece Beef Bouillon Cube
  • Salt
  • Chopped Onion Chives

Method
