Chili Garlic Fried Rice is a fiery breakfast to start your day. Enjoy it wth your favorite silog varieties or even dried fish. I had mine paired with roasted dried anchovies, sunny side up egg, garlic vinegar sauce and a good mug of hot black coffee.

Weekends are probably the only days in a week that a truly enjoy eating breakfast. I get to eat hot meals. Savor every bite of the food and chillingly sip a good mug of hot coffee without thinking the time.

I love spicy food. This chili garlic fried rice is one of those foods that I really enjoy eating. When I’m too lazy to fry some rice, I would just drizzle my rice with some chili garlic oil I bought last week. The chili garlic oil is really spicy. A drop of oil onto your tongue will really give you a sweat.

Last night, I decided to cook this recipe for Sunday breakfast and I remembered I bought a package of dried anchovies last week. The thought of spicy fried rice, some toasted dried anchovies with garlic vinegar dipping sauce and sunny side up egg made me drool and excited for breakfast.

The hot freshly made fried rice is enjoyable to eat. The toasted anchovies dipped in garlic vinegar sauce balances the spiciness of the fried rice. The creaminess of the sunny side up egg completes everything together. It’s like harmony of music in your mouth.

Tips

The good thing about this Chili Garlic Fried Rice recipe is you can control how spicy you want it to be. I decided to just add a teaspoon of the chili garlic oil so not to over empower the other flavors of the meal. I just want that right amount of heat but still taste the flavor of the dried anchovies and egg.

If you feel you need more fire, simply add another teaspoon of chili garlic oil. What I did is to finishes it up with a little drizzle of the chili garlic oil, including the toasted dried anchovies and egg. More spicy? Have your garlic vinegar sauce with some chopped red chili will surely do the trick.

Want that red orange chili garlic oil to color your rice for more aesthetic appeal? Use a plain day old rice. I used leftover rice since its our staple rice in our home. Always remember to use leftover or day old rice. It’s much firmer and ideal for fried rice.

Ingredients

1 TablepsoonOlive Oil
1 teaspoonChili Garlic Oil
1 cupLeft Over Rice
1/4 teaspoonSalt
Sunny Side Up Egg
Roasted Dried Anchovies
Garlic Vinegar Sauce

Procedure

Heat sauce pan.

Add olive oil and chili garlic oil.

Add left over rice and stir fry for 5 minutes with continuous mixing.

Season with salt.

Serve with sunny side up egg, toasted dried anchovies and garlic vinegar sauce.

  • 1 teaspoon Chili Garlic Oil
  • 1 cup Left Over Rice
  • 1/4 teaspoon Salt
  • Sunny Side Up Egg
  • Toasted Dried Anchovies

Method
